Daring Bakers Novembre 2008 : Caramel Cake


Here is my first challenge !
Very tasty cake but a bit really too sweet for my palate. I placed sweetened Oranges Marmelade between layers to balance the sweetness.

Dans mes lectures Culinaires j'ai des habitudes chez certains Blogs Anglophones que j'apprécie particulièrement. Je découvre donc régulièrement à chaque fin de mois leur participation aux Daring Bakers
J'aime beaucoup l'idée qu'à plusieurs on cuisine "ensemble", puisque à ses débuts je participais moi aussi et avec grand plaisir au défi Blog Appétit où nous étions là aussi nombreux à créer une recette originale à partir de deux aliments préalablement choisis.

Pour les Daring Bakers c'est tout autre, puisque il s'agit pour tout le monde de suivre à la lettre la même recette avec cependant une liberté quant à la présentation bien sûr, un parfum, une saveur, une déclinaison personnelle ...

Il y a deux mois je regardais avec plaisir chez Isabelle , ses défis Daring Bakers précédents et je dois dire que sa régularité, ses adaptations ont fini de me décider à me joindre à cette fine équipe.
Alors bien sûr moi qui suis plutôt un bec salé que sucré, c'était un peu prévisible que je me retrouve face à une meringue recette pas du tout dans mes habitudes, ni goûts. Mais sachant cela je me disais que ceci m'inciterai à faire plus de gâteaux et de desserts justement ...

Vous pouvez me croire le fameux Caramel Cake de ce mois ci est certainement le gâteau le plus sucré que j'ai jamais dégusté, en tous cas que j'ai jamais fait ! Je suis d'autant plus ravie de m'être lancée car autrement je n'aurai jamais tenté cette recette et c'est bien dommage. Je suis donc ravie d'être une néo Daring Baker et attend avec hâte le challenge de Décembre prochain.

C'est du tout Caramel et le goût est très présent et très agréable quand on est fan de Caramel.
Le glaçage très sucré riche en beurre noisette, nappe le gâteau arrosé qui plus est d'un bon caramel liquide. 
Afin d'être certaine d'exploser ma Glycémie j'ai rajouté de ma propre initiative au milieu du gâteau une savoureuse couche de confiture d'oranges faite maison car j'aime bien l'association orange-caramel et que je voulais un peu atténuer le côté tout sucre, tout caramel !

J'aurais pu m'arrêter là, mais comme il me restait du caramel tout frais j'ai eu envie de faire du pop-corn que j'arroserai avec. 
Du coup ni une ni deux ne voilà t-il pas que je parsème du coup mon Caramel Cake de pop-corn (tout chaud qui a fait fondre mon glaçage) au caramel : La Totale !

Ci-dessous la Version Originale de la recette, je mettrai la Version Française dès que mon taux de Glycémie sera revenu à la normale et que j'aurai traduit The recipe !

Caramel Cake With Caramelized Butter Frosting

10 Tablespoons unsalted butter at room temperature
1 1/4 Cups granulated sugar
1/2 teaspoon kosher salt
1/3 Cup Caramel Syrup (see recipe below)
2 each eggs, at room temperature
splash vanilla extract
2 Cups all-purpose flour
1/2 teaspoon baking powder
1 cup milk, at room temperature

Preheat oven to 350F
Butter one tall (2 – 2.5 inch deep) 9-inch cake pan.

In the bowl of a stand mixer fitted with a paddle attachment, cream butter until smooth. Add sugar and salt; cream until light and fluffy.
Slowly pour room temperature caramel syrup into bowl. Scrape down bowl and increase speed. Add eggs/vanilla extract a little at a time, mixing well after each addition. Scrape down bowl again, beat mixture until light and uniform.
Sift flour and baking powder.
Turn mixer to lowest speed, and add one third of the dry ingredients. When incorporated, add half of the milk, a little at a time. Add another third of the dry ingredients, then the other half of the milk and finish with the dry ingredients. {This is called the dry, wet, dry, wet, dry method in cake making. It is often employed when there is a high proportion of liquid in the batter.}
Take off mixer and by hand, use a spatula to do a few last folds, making sure batter is uniform. Turn batter into prepared cake pan.

Place cake pan on cookie sheet or 1/2 sheet pan. Set first timer for 30 minutes, rotate pan and set timer for another 15-20 minutes. Your own oven will set the pace. Bake until sides pull away from the pan and skewer inserted in middle comes out clean. Cool cake completely before icing it.

Cake will keep for three days outside of the refrigerator.

Caramel Syrup

2 cups sugar
1/2 cup water
1 cup water (for "stopping" the caramelization process)

In a small stainless steel saucepan, with tall sides, mix water and sugar until mixture feels like wet sand. Brush down any stray sugar crystals with wet pastry brush. Turn on heat to highest flame. Cook until smoking slightly: dark amber.

When color is achieved, very carefully pour in one cup of water. Caramel will jump and sputter about! It is very dangerous, so have long sleeves on and be prepared to step back.
Whisk over medium heat until it has reduced slightly and feels sticky between two fingers. {Obviously wait for it to cool on a spoon before touching it.}

Note: For safety reasons, have ready a bowl of ice water to plunge your hands into if any caramel should land on your skin.

Caramelized Butter Frosting

12 tablespoons unsalted butter
1 pound confectioner’s sugar, sifted
4-6 tablespoons heavy cream
2 teaspoons vanilla extract
2-4 tablespoons caramel syrup
Kosher or sea salt to taste

Cook butter until brown. Pour through a fine meshed sieve into a heatproof bowl, set aside to cool.
Pour cooled brown butter into mixer bowl.
In a stand mixer fitted with a paddle or whisk attachment, add confectioner's sugar a little at a time. When mixture looks too chunky to take any more, add a bit of cream and or caramel syrup. Repeat until mixture looks smooth and all confectioner's sugar has been incorporated. Add salt to taste.

Note: Caramelized butter frosting will keep in fridge for up to a month.
To smooth out from cold, microwave a bit, then mix with paddle attachment until smooth and light.

    C'est ce que j'aime chez les DB, c'est qu'on fait des recettes, que l'on n'aurait probablement jamais faites...j'aime les expériences...alors des fois, on tombe sur quelque chose qu'on adore, et d'autres fois...un peu moins..mais c'est le jeu :)

  9. Bienvenue dans le groupe! Moi aussi je suis une 'jeune daring bakers' et j'aime beaucoup ce genre de défi car jamais je n'aurais fait un gâteau si sucré et finalement, j'ai quand même aimé! On verra le prochain défi à quoi ça ressemblera, en tout cas, ce gâteau, il est vraiment réussi! Bravo!

  17. Je n'étais plus repassée depuis le changement et qu'est-ce que c'est joli ton nouveau chez toi... tout comme ce cake que je n'ai jamais tenté moi non plus.

    Je suis caramel addict, mais j'ai du mal avec trop de sucre, chercher l'erreur...
    Il doit bien exister des recettes non pas allégées en sucre, mais au goût moins surchargé non ?
    Les photos font très envie.
